They are working on Minecart physics as of the last snapshot or two. They've increased the speed cap, and allowed for Minecarts to now go flying off the end of tracks if angled upwards. The higher the speed, the further and higher the minecart flies.
For minecarts to bounce higher on slime blocks, it would likely need to have more kinetic energy to do so. There is some amount of real world logic that possibly needs to be followed for certain things to happen. I can see an increase in bounce height by another block or two, but any more seems a bit excessive, as does the current physics they've got in the snapshots.
