I have a long railway with several sets of points, which are controlled by a lever that I've placed nearby. However, when I'm whizzing by on my minecart, that lever is actually quite hard to aim for and press at the right time - is there an alternative to this that sends a similar redstone signal but is easier to aim for while moving?
When the new update comes out with much faster minecarts - it'll be almost impossible to do anything while moving....
But do you mean like a "station" or a stop? In this case, put a powered rail down that is 'unpowered' until you hit a button.
When moving towards it, the unpowered rail should stop you. Then you hit the button (and your other levers if they are for other things) and you'll start moving again.

You could convert a lever into a noteblock plus a copper bulb, and take the signal from the latter. You click the noteblock, you switch the bulb state as a lever.
You could try using a redstone torch or redstone dust with pressure plates instead of a lever. Place the pressure plates near the track where you pass by, so they activate when you run over them. This setup can trigger the redstone signal without needing precise aim, making it easier to control the points while moving.
