Pretty self-explanatory from the title itself, but I'll provide a screenshot and the video to the design of the farm as well. I'm not sure if there's a fix to this issue or there will be a lost of xp and drops no matter what.

another issue I encountered is that I can hear spiders dying, maybe getting stuck on the signs above in the ceiling.
I use a similar spider farm on my survival world. I modified this classic design by putting line of 3 hoppers under the fences that connect to a line of hoppers on the side that lead to a double chest. This picks up the few drops that are way back. You want to stand all the way against the chest when collecting XP. That way XP orbs flow right to you. Finally, you don't want knockback on your sword. I use a bane of arthropods 5, looting 3, unbreaking 3, mending diamond sword. You can also add sweeping edge if you like. I also use the double chest to store my "Arachnophobia" spider killing sword and to empty odd bits from my inventory.
Here are a few things I am doing different than the video is I only use 1 row of signs on the bottom. I let the water from the spawner room push the spiders into the killing tunnel. I used open fence gates up top for the climbing spider kill trap. I used all unnatural block to avoid inadvertently digging into the farm. I used iron trap doors instead of wood to avoid accidentally moving the trap doors.

I don't see why you'd need the fences anyway. The rest of the setup should prevent the spiders from escaping.

You need to put slabs above the hoppers as to not let the xp fall down into their slots.
