Without looting, it can't drop more than one so that might be proof that it isn't an eye, but at the same time combining it with blaze powder creates and ender eye even though blaze powder isn't an eye. It could be it's heart or something, but idk.

Who says it has to be an Organ from the Enderman? What if it's just a tool Endermen use to teleport around? Much like how a Skeleton uses Bows and Arrows, or Zombies use Armor and Swords?

I like the idea of it being a heart, or some other organ.
I do think it may have been originally intended as an eye, though, the ender pearl colors are a lot closer to the original enderman eye color than they are now. But I'm guessing that idea was scrapped since ender pearl textures were never updated.
I think whoever says its the eye is stupid because the eye is a square so I think its a separate organ please let me know what you think
