Without anything to plant, or any crops already planted, a Farmer won't maintain a crop. Otherwise they'll gain the profession from the block. If you don't like the first trades they have you can break the Composter so they lose their job, and replace it so they get it again. This resets the trades for them.

Farmers don't come pre equipped with seeds and roots to plant on empty farmland. Give them the seeds you want them to plant or plant some crops yourself to start. Bear in mind that they're not the best at planting crop types in equal amounts, and they tend to choose randomly which to plant based on which they randomly harvest first. You will want a lot of seeds/roots of each crop and maybe mix them yourself. If you don't have enough, use the composter, and the seeds/roots/other natural goods you have a lot of, to make bonemeal and get more of the seeds/roots you're short on (without the farmer grabbing them, maybe).
c an i make one there and try to get one of the guys without no job to be a farmer? i found a potato in a chest and i already have wheat to plant.
Make a Composter and a villager (That's not a nitwit) will go to it and become a Farmer. Every Profession has a block that corresponds to them.

This only works for villagers that don't already have a profession, and aren't locked to a profession after being traded with already.
Composter = Farmer
Cauldron = Leatherworker
Brewing stand = Cleric
Grindstone/Smithing table/Blast furnace = Weaponsmith, Armorsmith, and Blacksmith
Lectern = Librarian
Fletching table = Fletcher
Smoker = Butcher
Stonecutter = Mason
Loom = Shepard
Barrel = Fisherman
Cartography table = Cartographer

Using the ignore feature here is kinda weird.

You don't even need crops for the job, though they help for sharing food and thus improving village morale (more kids + more golems + better trades).
