I'd encourage you and your son to try out something like Blockbench, which is a 3d modeling software specifically for minecraft-style models. Here's a blog post on the official minecraft site recommending it, and here's their quickstart guides. (This assumes your son plays on Bedrock. If he plays on Java, Blockbench is likely still a good choice, but the instructions may be slightly different.) Be aware that while you can do a lot with resource packs, you can't do everything, so you might need to compromise on some things. (Call it a first draft!)
