It's simply not the only music that exists now, so of course it plays less.
If you have 15 tracks, you're going to hear any individual track more often across thousands of hours, than if you have 30 tracks across that same amount of time.
That's... just how it works.
However, some of the new music only plays conditionally (meaning, in certain biomes or dimensions), whereas most of the old music is just random.
The old music has not gone anywhere though. C418 is simply not the only audio composer anymore, and from what I understand, this comes down to a difference of opinion in rights. Before, C418 retained the complete rights to the music. Now, Mojang/Microsoft want it. It's easy to try and paint Mojang/Microsoft as the "bad actors" here, but this actually makes sense. If they don't have rights, they might be prevented from using it in the future. I've literally seen games removed from sale on Steam over licensing issues just with audio. It's not a fun situation. C418 may not "do that", but I don't entirely fault Mojang/Microsoft for covering their bases here. C418 could have agreed to those terms but didn't.
C418's old music still exists, however. There's also (at least) three new composers involved now, and they all make good audio too. I do wish the game had an in-game audio playlist controls, but... C418's stuff still exists and plays a lot even in current versions. Take it from someone who heard it a lot.
Otherwise, as someone else said, you could support C418 (if that's your overall motive) and purchase the albums, and play it in the background. That might not be ideal because Minecraft doesn't play tracks back to back, but... a solution to that would be to mix in numerous "empty" audio tracks of different lengths, and then have the playlist shuffle. If you include enough empty tracks (and they are the right length), you can have it mimic silence most of the time, with the occasional C418 track. It involves some work with methods outside the game, but if you actually want only C418's stuff playing for whatever reason, it is possible.

Minecraft added new music and I don't think they deleted any old music.
No, unfortunately old c418 music doesn't play as often. There are mods tho that only includes the c418 soundtracks instead of Lena Raine's.
There is an option, purchasing copies of C418's music and then running it in shuffle mode in background while playing Minecraft.
Shouldn't have to do this though, the fact you have a copy of the game itself means you should be getting the experience you paid for.
Minecraft is not the only game that has fell victim to this though and it may be related to some copyright dispute with Microsoft.
I noticed C418's music plays less often, but it sometimes does still play,
but it is obvious there is more probability of Lena Raine's music playing because sometimes it's all you ever hear
in a Minecraft session. I can't even remember the last time C418's music played and I love the Living Mice tune, as it is so relaxing.
