So I wanna create a Minecraft World with big Mountains and stuff like that, but they took away the customized settings, i heard something about json Files how i do that? Or has someone an other idea?
Sooooooooo a way you could do this is by putting in a seed (which you can get from the internet). A seed controls the world spawn rates and you can also use presets to further customize your world. also, if you click on world options click on world type. Next, click on the setting next to it until you get to buffet. Then, click on customize, and you can get world options and presets that minecraft has already made for you. You can also customize your own world by going to minecraft.tools

You can create a customized world in 1.12, then port to 1.14 with a workaround. Here is a video on the subject:
This video is confusing me a bit, would it work with something like Neo-Beta?, considering that its a bit more advanced?

I recommend using
minecraft:barrier,5*minecraft:air,5*minecraft:cobweb;minecraft:plains;
