When I'm online and go on minecraft, it is the full version( which I have paid for). But as soon as I go offline, it switches to the trial version.
Though I have switched the game to another Xbox that I got because I couldn't use the other one.
I have deleted the game and reinstalled it but it still does the same thing. Anyone any ideas when it does this?

It was my understanding that Microsoft made it so you need to be signed in on Xbox Live to play the full version of any Arcade Game you own. I was under the impression that it's been this way for a while. that's why when I'm not logged in to Live, all my arcade games are trials. Then again, that was a few years ago.
This happens when you do not own the license. Maybe you downloaded it on a different console
Yep, your license for the game is linked to the console it was bought on, as well as the account that bought the game. If you go to the transfer license page on the xbox site you can transfer the license from one xbox to another, however this will erase it off of the first xbox. If you are trying to have it on two xbox's at once you will need to buy the game again.
Edit: However by the looks of the other posts it may be a issue with the license with the game, I know I can play the full castle crashers game offline no problem. I have never tried Minecraft offline though, I can test it when I get home from work if someone else doesn't beat me to it.

That's not true. I just played my game offline to test. It was the full version, not the trial version.
You probably need to do a license transfer to the new Xbox 360.
I did buy it on another Xbox then transferred my profil to a newer Xbox I got and the game so ya it must be a license problem

I don't have a new 360 lol I've owned the same Xbox 360 and the same Hard Drive since 2008(ish)
Lucky... lol I've been through 4 and none of them red ringed, its always been the disk drive reader or the video card. I seem to have really bad luck, however since they have let you install games to the harddrive I haven't had any problems (knock on wood) with the new slims.
O/P A just profile transfer won't do it, use the link provided by Urban and you will be good to go.

Not true. If it were, I would not play XBLA games. Period. Indie games, however, (XBLIG) do require a constant online connection, for whatever reason. That is a shame, because there are several I would have bought were it not for this unacceptable hurdle. I did buy one indie game before I realized this problem.
Digital purchases on XBL are dongled 2 ways, (1) by your account and (2) by your console's unique ID number. Either one of those alone will be good enough to play a purchased game. If you are on the console where you purchased/downloaded the game, you can play offline, even on a different profile/account. If you are on a different Xbox from the one used to purchase/download the game, you must be signed into the purchasing Live account to be able to play it.
You can transfer licenses from one console to another, but be aware that you can only do this a few times per year. So choose your time to do this carefully. Go here to transfer licenses.
I ran into this issue myself when I used to play Console Legacy Xbox 360 on a regular basis. Xbox Support didn't help out much, and doing a License Transfer didn't do anything to resolve the issue. I think there is a bug with the digital version of Console Legacy Xbox 360 Edition where any console outside the original console it was downloaded onto while also assigned to a profile will not work offline, save if you own a Physical Disc Copy of Console Legacy Xbox 360 Edition as this was my workaround (Buying a physical copy). My first 360 was a Black Slim Model, and this issue started upon getting a Limited Edition Halo 4 Xbox 360 Console and doing a license transfer to the Halo 4 Model.
So if this issue occurs the only real fix is to buy a physical copy of Console Legacy Xbox 360 Minecraft.

Correct, if not people would only buy one copy and make copies of the game for all of their friends to play.

I have just had this issue in 2022
